Get Ready for National Pancake Day {+ Recipe!}

Pancakes are a staple in our house, but because of my children's severe food allergies, they aren't something I can quickly whip up upon request.  But, since I'm the kind of person who jumps at any reason for a party, you can bet your short stack that we will be celebrating National Pancake Day on February 28th!  


IHOP coined National Pancake Day in 2006, and since has raised nearly $8 million to support charities in the communities in which it operates. On February 28, 2012, guests from around the country are invited to celebrate National Pancake Day at IHOP and enjoy a free short stack of Buttermilk pancakes. In return for the free pancakes, guests are asked to consider leaving a donation for Children's Miracle Network Hospitals.  With over 5 locations throughout Monmouth and Northern Ocean County, you have no reason not to venture out on donate to a good cause while enjoying your short stack on the 28th!  


I am going to be asking my son's schoolteacher to allow me to make a large batch of allergy-friendly for his class to enjoy, and I thought I'd share my delicious recipe with you.  It's simple, makes about 18 kid-sized pancakes, and is absolutely delicious.  

Ingredients
2 cups flour (gluten free works, if need be)
4 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons sugar
2 cups milk (soy milk works great for those with dairy allergies)
4 tablespoons oil or applesauce
1/2 teaspoon vanilla extract
dairy-free butter spray to fry the pancakes in

1.  In a small bowl, combine the flour, baking powder, salt, sugar, milk, oil/applesauce, and vanilla.  Whisk together until smooth.


2.  In a large skilley on medium heat, coat pan with spray and brown pancakes on both sides.  

Enjoy!
