I'm not a huge fan of hot dinners in the summertime.  The last thing I want to do after spending time in the sun all afternoon is stand in front of a hot stove.  Of course, we grill alot during the summer, but I'm looking to get a few new recipes for some COLD summer dinners.  Got any to share? 

I recently found this one for Marinated Chicken and Corn Salad - and I substituted Quinoa for the Barley.  It was really easy, fresh and delicious.

YUM!! I don't really have any cold main dishes but a cold side dish that we make all the time is cucumber salad-- I cut 2 large cucumbers into bite sized chunks then add half a tub of plain yogurt and minced garlic, salt and pepper to taste and mix it all together! It's delis
